White chocolate mousse with Açai

What do we need:

  •   250 g Açaico - frozen
  •   100 g white chocolate, 3 slices of gelatin
  •   150 ml of red port wine, 1 vanilla pod, 3 slices of gelatin
  •   400 ml cream 30%, 75 g mascarpone, 2 tablespoons sugar

Soak gelatin in a bowl with cold water. We cook half the cream with vanilla about 2/3 the volume, add the broken chocolate and let it melt. Squeeze the gelatine from unnecessary water, put in a metal bowl and melt in a water bath. Then she stir in cream with chocolate. Pour mixture into a metal bowl, sit in the sink with cold water and stir it starts to thicken. Then fold the rest of the whipped cream, foam split into glasses and leave to set. Before serving, hold the form upside down under warm running water. We cover the bottom size, so cream will take out easily.. Cut it into portions and add half defrost Açaíco. Preparation time: 50 minutes plus freezing time
